Strata with Cipollini Onions & Arugula

For 8 servings you will need:

  • 4 Tbls. Olive oil
  • 5-6 oz arugula
  • 1 ½ large onion, cut into ¼ slices
  • 4 garlic cloves, minced
  • 9 eggs
  • 2 ¾ cups half n half
  • 4 ½ oz. asiago cheese, shredded
  • 1 ½ freshly ground pepper
  • 8 slices French bread, cut into 1¨ cubes, crust on, dried overnight or toasted in oven

In sauté pan over medium, heat 2 tbls oil, add arugula and cook until wilted (about 2 minutes). Remove from pan and put in bowl.

In same sauté pan over medium heat, warm 2 tbls, oil; add onion and sauté until caramelized, about 15 minutes; add garlic, sauté until aromatic, about 1 minute. Remove from heat.

In large obwl, whisk together eggs, half n half, cheese, pepper. Stir in bread, arugula and onions. Transfer to 13X9 inch pan. Cover and refrigerate overnight.

Preheat oven to 350°. Bake strata, uncovered until golden brown and cooked through, about 1 hour. Let stand 5 minutes before serving.
