Spiced Pear French Toast

For the French toast
For the spiced pears
- 1 medium loaf cinnamon bread, crusts removed
- 6 large eggs
- ½ cup sugar
- 2 ½ cups milk
- 1 ½ tsps vanilla extract
- 2 tbls. Butter
- 2 firm-ripe pears, cored and cut into chunks
- 1 tps sugar
- ½ tsp ground cinnamon
- dash of grated nutmeg
- ¼ cup maple syrup, plus additional for serving
For the French toast, oil or spray a 9x12-inch glass baking pan. Tear the brad into small pieces and scatter in the pan evenly.
In a small bowl, whisk the eggs and sugar until light. Add the milk and vanilla and whisk well. Pour over the bread evenly and press down with a spoon to make sure all the bread is submerged. Cover with foil, gently pressing down so the foil is right on the surface of the bread. Cover and refrigerate overnight.
The Next Day
Keeping the foil on the baking pan, slide the pan into a cold oven. Turn the oven to 35o°. After 25 minutes, remove the foil. Continue baking until the toast is puffed and golden about 20 minutes. While the French toast is baking, prepare the spiced pears.
For the spiced pears, melt the butter in a nonstick frying pan over medium-high heat, then add the pears. Stir until the pears are well coated with butter, then sprinkle with sugar, cinnamon, and nutmeg. Continue to cook until the pears begin to soften, about 3 minutes. Pour in ¼ cup maple syrup and cook until bubbly. Remove from the heat.
To serve, slice the French toast into 8 servings and top with the spiced pears. Serve with additional maple syrup, if desired.
