We use the persimmons from the tree at Chien Blanc. Feel free to pick some!
1/2 cup butter
1 cup sugar
1 cup persimmon puree (3 medium or 2 large persimmons make 1 cup puree)
2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon salt
1/2 teaspoon cloves, ground
1 cup nuts, chopped (optional) use your favorite, we love pecans
Preheat oven to 350 degrees. In mixing bowl cream butter and sugar together. Add egg,
persimmon puree and mix well. Stir flour, baking powder, baking soda and spices together
and add to the mixture. Mix well. Drop by teaspoon onto greased cookie sheet.
Bake for 10-12 minutes at 350 degrees.
Yield: 5 dozen cookies.
