Fresh Fig Baked Custard

(From the Adobe Inn in San Luis Obispo, CA)

  • 1 cup sugar
  • 6 tbls all-purpose flour
  • 2 ½ tsps baking powder
  • Pinch salt
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 tsp bourbon or rum
  • 1 cup chopped pecans or walnuts
  • 1 cup diced and stemmed fresh figs
  • 1 tsp grated fresh lemon rind

Preheat oven to 350°.  In large bowl, mix sugar, flour, baking powder, and salt.  In separate bowl, beat eggs, vanilla, and bourbon; stir into dry ingredients.  Fold in pecans, figs, and lemon rind.  Mix several minutes or until well blended.  Pour into greased 8-inch-square baking pan.  Bake 30 -35 minutes or until knife inserted in middle comes out clean; cool.  Cover and refrigerate overnight.  Serve with cream or fresh whipped cream if desired.
