Italian Sausage Frittata

( Taken from the La Chaumiere Inn in Calistoga, CA )

For 8 servings you will need: 

  • 1 ½ lbs. mild Italian bulk sausage
  • 3 cups sliced fresh mushrooms
  • 1 tsp. garlic powder
  • 2 tbls. Butter
  • 1/3 cup white wine
  • 3 large swiss chard leaves, thinly sliced
  • 1 cup shredded mild cheddar cheese
  • 9 eggs
  • 1 ¼ cups milk
  • 2 to 3 tlbs. Dijon mustard

Preheat oven to 350°.  In large skillet, brown sausage;  drain.  Spread sausage evenly in greased 13-by-9 inch glass baking dish.  Sauté mushrooms and garlic powder in butter and wine until almost all liquid is absorbed; spoon over sausage.  Top with swiss chard and cheese.  In large bowl, beat eggs, milk, and Dijon mustard; pour evenly over all.  Bake 1 hour or until middle is firm to the touch.  Cover loosely with foil and let stand 15 minutes before cutting.  Serve with sour cream, salsa, and chopped fresh chives if desired.
