Sunday Breakfast Casserole

( From the Good Medicine Lodge in Whitefish, Montana )

  • 4 cups cubed day-old bread (bagels, English muffins, croissants)
  • 1 cup mixed shredded cheese
  • 9 large eggs
  • 3 cups milk
  • 1 tsp dry mustard
  • ½ to 1 tsp garlic powder
  • ½ cup crumbled blue cheese
  • ½ cup cottage cheese
  • 9 bacon strips, cooked and crumbled
  • 1 cup chopped onions
  1. Oil a 9 x 13 inch glass baking dish. Spread the bread cubes across the bottom of the dish and sprinkle with the 1 cup mixed shredded cheese.

  2. In a large bowl, combine the eggs, milk, dry mustard, and garlic powder. Add the blue cheese and cottage cheese and mix in., Pour the mixture overt the bread and cheese. Sprinkle with the bacon and onions. Cover and refrigerate overnight.

  3. The Next Day
    Preheat the oven to 350°. Bake the casserole, uncovered, until golden brown on top, about 50 minutes. Serve warm.
