Rosalie's Favorite Chili Egg Puff Casserole

  • 10 eggs
  • 1 pint creamed cottage cheese
  • ½ cup melted butter
  • 1 lb. jack cheese, shredded
  • ½ cup unsifted flour
  • 1 tsp. baking powder
  • ½ tsp. salt
  • 2 4-oz. cans diced chili peppers

Beat eggs and add everything else. Bake in buttered 9" x 13" dish. Bake for 35 minutes at 350 º or until firm and knife comes out clean. Cut in wedges. This can be done and baked just before serving, or even reheated after it has been baked. Mushrooms or spinach may be substituted for the chilies. Enjoy.
